a day full of cake

the other day was my host mums birthday so the boys and i made her a birthday cake but i do believe i have found the holy grave of chocolate cake recipes!! if you saw my post on chocolate chip muffins (post here) it didn't contain butter in the batter, which i was surprised at having always put butter in cakes but these were amazing. so when this recipe didn't call for butter either i was hoping for a good result again and boy i wasn't disappointed :)

the cake was so moist and chocolatey, it was heavenly and i loved giving it to my host mum and having her be so impressed :) the boys are i decorated it, with the three year standing on his step stool shouting "more sprinkle, more sprinkles!!" for at least five minutes lol if you are looking for a new chocolate cake recipe or imply want to bake tonight i would strongly recommend this one, one word of warning - don't be alarmed when after having added the water to the mix it looks like chocolate soup it will all turn out fab in the end, just go with it and trust the recipe :D

2 cups of white sugar
1 3/4 cups of white flour
3/4 cup unsweetened cocoa powder
1 1/2 baking powder
1 1/2 baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

1. preheat oven to 350 degrees F (175 degrees C) grease and flour 2 9 inch cake pans
2. in a medium bowl mix the sugar, flour, cocoa powder, baking powder, baking soda and salt. add the eggs, milk, vegetable oil and vanilla and mix with an electric whisk for 3 minutes. stir in the boiling water by hand and separate and pour between the two pans.
3. bake for 30-35mins in preheated oven, until a toothpick inserted comes out clean. cool for 10 mins before removing from the pans to cool completely.

it was definitely a week full of cakes as earlier in the week, and i just had to share these with you, we got a box of trophy cupcakes for helping out with lifts. the box was filled these incredible caramel apple cupcakes :) the cupcake itself was apple flavoured topped off with caramel buttercream and toasted pecans and the cutest little pretzel stick and sugar paper leaf to make it look like a real apple!!! they tasted just as good as looked too :D
